This seasonal Sindhi vada combines flavourful green garlic in a spiced, crispy patty which can be eaten as a snack or as part of a meal.

Bunch of fresh green garlic Small piece of ginger 4-5 green chillies Handful of coriander leaves Pinch of hing (asafoetida) 1 teaspoon Amchur (dried mango powder) 2-3 tablespoons Rice flour Salt to taste Oil for frying

Take the green garlic, coriander leaves, green chillies, and ginger. Roughly chop them and then pound in a mortar and pestle in batches to a coarse paste.

Add all the other ingredients and mix well. Add a very little water to form a thick mixture for shaping the vadas.

Shape the mixture into small round vadas. Oil them slightly and keep them aside ready to fry.

Heat oil for frying. Fry the vadas until they turn golden brown. Remove and place them on a plate.
