Ingredients

2 cups all-purpose flour 1 1/2 cups grated carrots 1 cup granulated sugar 1/2 cup brown sugar, packed 1/2 cup applesauce 1/2 cup vegetable oil 1/2 cup almond milk 1 tsp vanilla extract 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1 tsp ground cinnamon 1/2 tsp ground nutmeg

Ingredients

1 cup vegan cream cheese 1/4 cup vegan butter or margarine, softened 3 cups powdered sugar 1 tsp vanilla extract Zest of one lemon (optional) Chopped nuts or shredded coconut for decoration (optional)

Step 1

In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg.

Step 2

In another bowl, combine grated carrots, applesauce, vegetable oil, almond milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.

Step 3

Preheat your oven to 180°C and pour the cake batter in a baking tray. Bake for 20-25 mins and let it cool.

Step 4

Meanwhile, prepare the vegan frosting. In a mixing bowl, beat the vegan cream cheese and softened vegan butter until smooth and creamy. Add the powdered sugar, vanilla extract and lemon zest.
