You might be tired of eating the normal fruit cake! We bring to you the sugar free carrot cake for you as well as your toddler. We are sure that this healthy and tasty cake will be loved by your little one as well as the adults too. Besides, you’re a diabetic, you can try this cake.
75g coconut oil, melted, plus extra for greasing 350 g overripe banana 1 tbsp vanilla essence 70g white spelt flour 130 plain flour 2 tsp baking soda 1 tsp bicarbonte of soda 2 tsp ground cinnamon 220 g coarsely grated carrot, plus extra for decoration 4 tbsp plant based milk 60 g walnuts, roughly chopped
For yogurt icing 200g plant-based yogurt 1 tsp vanilla essence
Preheat the oven to 160 degree Celsius. Then grease the base and sides of an approx. 20cm cake tin with coconut oil and line the base with baking powder.
Peel the bananas, add the flesh to the large mixing bowl and mash it until smooth
Add the vanilla essence and cocout oil to the bowl, the stir. Next add the spelt flour, plain flour, baking powder, bocarbonate of soda and cinnamon and mix.
Add the carrots, raisins and plant-based milk. Then mix again until fully combined. Tip the cake mixture into the cake tin and bake for 45-50 minutes.
To make the icing, whip together the yogurt and vanilla in a mixing bowl using a whisk. Then refrigerate until ready to use.
Once the cake is done, cool it completely.
Spread the yogurt icing all over and finish with a sprinkling of chopped walnuts and some grated carrots.
