Kala chana holds significance during Navratri. It is protein-rich, healthy, and an integral part of Ashtami and Navami bhog. This year, you can do something different with this ingredient and prepare kebabs for the festive spread.
2 cups boiled kala chana 1-inch cinnamon Salt to taste 1 tsp red chilli, coriander powder ½ tsp turmeric, cumin powder 1-2 green chilli ¼ tsp black pepper 1 bay leaf 2 tbsp coriander leaves 1 tsp garam masala Oil for frying 1-star anise
Rinse kala chana thoroughly and soak them overnight.
In the morning, boil kala chana with a bay leaf, cinnamon, and star anise.
Once boiled and cooled off, remove whole spices and add kala chana in a food processor.
Add green chillies and coriander leaves to the processor. Grind into a thick paste.
Add spices and mix nicely. Take a small amount of this blend and shape it into kebabs.
Shallow-fry, deep-fry, or bake the kebabs and serve them hot with green chutney.
