Prepare a delicious Instant Suji Handvo at home with this simple recipe. Made with semolina (suji), yoghurt, and a few vegetables, this savoury cake is a quick and flavourful dish perfect for any meal.
1 cup semolina (suji/rava) ½ cup yoghurt (dahi) ¼ cup water 1 onion, chopped 1 capsicum, chopped Carrot, grated Sweet corn Coriander, chopped 1-2 tsp turmeric powder Salt to taste 1 tbsp ginger-green chili paste 1 tbsp oil Mustard seeds, cumin seeds, sesame seeds for tempering 1 sachet eno (or 1 tsp baking soda)
In a bowl, mix semolina, yoghurt, and water gradually to form a smooth batter. Let it rest for 10-15 minutes.
Chop the vegetables. To the batter, add turmeric powder, salt, and ginger-green chili paste. Mix well. Add chopped vegetables to the batter and mix thoroughly.
In a pan, heat oil and temper mustard seeds, cumin seeds, and sesame seeds. To the batter, add eno (or baking soda) and quickly mix. Pour the batter into the pan, spreading it evenly.
Cook the handvo on low flame for 10-12 minutes or until golden brown. Flip the handvo and cook for another 2-3 minutes. Serve hot and enjoy your Instant Suji Handvo!
