A quick, easy and healthy recipe, Kung Pao Tofu is a dish you can whip up in no time. Add some quinoa and veggies and this one turns into a delicious and wholesome meal too.

1 block extra-firm tofu, cut into chunks 2 tbsp cornflour 1 tsp ginger-garlic paste ½ cup soy sauce 2 tbsp vinegar 1 tbsp brown sugar 2 tbsp sesame oil 3 red chillies, diced 1 red bell pepper, diced 1 green capsicum, diced 5-6 green onions, diced ½ cup roasted peanuts 1 cup quinoa/rice, to serve 2 tbsp coriander leaves, garnish

Place the tofu chunks in a large bowl, then add the cornflour and toss thoroughly.

Heat the oil in a pan, then fry the coated tofu chunks until golden brown. Drain and set aside.

In the remaining oil, add the ginger-garlic paste, soy sauce, vinegar and brown sugar. Mix well.

Add the red chillies, bell peppers, onions and fried tofu and give everything a quick toss.

Transfer the Kung Pao Tofu over a bed of rice or quinoa, add crushed peanuts and coriander leaves, and serve.
