Rava Kesari is a quick and delicious South Indian dessert made with semolina, sugar, ghee, and flavored with cardamom and saffron. Here's how you can make it.
1 cup Rava (semolina) 1 cup Sugar 1/4 cup Ghee 2 cups Water 1/2 cup Milk A pinch of saffron strands (soaked in warm milk) 1/2 tsp Cardamom powder 8-10 Cashews 8-10 Raisins
Heat 1 tbsp of ghee in a pan. Add the rava and roast it on medium heat until it turns aromatic and light golden. Set aside.
In the same pan, heat water and milk. Add saffron strands and let it come to a boil.
Gradually add the roasted rava to the boiling liquid, stirring continuously to avoid lumps. Cook on low heat until the rava absorbs the liquid and becomes soft.
Add sugar and mix well. Stir in the cardamom powder and the remaining ghee.
In a small pan, heat a tsp of ghee, fry the cashews and raisins, and add them to the kesari.
Stir everything well and cook for another 2-3 minutes until the ghee starts to separate. Serve warm.
