This Christmas Bake Maria Goretti's Favorite Sponge Cake

With Christmas just around the corner, it is time to bake some decadent cakes and make merry. Here is a quick and easy one from Maria Goretti’s kitchen.
Ingredients
1 tsp baking powder1 tsp soda bicarbonate150 gm all-purpose flour1 tbsp milk powder50 gm of softened butter150 gm brown sugar3 eggs70 ml vegetable oil2-4 tbsp maple syrup3-4 tbsp roasted melon seeds
In a bowl add baking powder, soda bicarb, all-purpose flour and milk powder. Mix it well.
In a separate bowl take softened butter and brown sugar, and whisk it.
Now add eggs, vegetable oil and maple syrup, and whisk again until it forms a lump-free mixture.
Now mix the prepared flour mixture into the batter. Cut and fold the batter until it has a smooth consistency.
Tightly wrap foil around the baking tray to avoid any leakage. Pour the prepared batter in a baking tray and sprinkle it with roasted melon seeds.
In a preheated oven at 180°C bake for 35-40 minutes. Garnish it with maple syrup. Your maple sponge cake is ready.
