Bihar's gastronomy is a melting pot of many flavours. But have you ever wondered what actually creates the layer of flavours to dishes like litti chokha?
It is the tantalising Bihari-style tomato chutney served by the side, which includes tomato, garlic, chilli pepper and some basic spices.
2 Tomatoes 2 Whole garlic 2-3 Green Chillies 1 spring of coriander leaves 1 Onion, finely chopped Salt, to taste 1/2 tsp Red chilli powder 1 tsp Roasted jeera powder
Roast tomatoes, garlic and chillies on gas stove. Once the skin is charred, remove it. De-skin the vegetables.
Take a mortar pestle and add garlic cloves and green chilli together. Mash well. Add coriander leaves to it and mash well.
Now, add the tomatoes and mix into a coarse paste. Add onion, salt, red chilli and roasted jeera and mix everything well.
Your Bihari tomato chutney is ready to be relished.
