These Protein Laddoos Are The Perfect Weekday Treats!

The perfect weekday dessert is the one that doesn't come with a side of guilt! Protein laddoos are a great idea, as they're made with a combination of protein-rich ingredients such as nuts, seeds, and pulses, along with natural sweeteners like jaggery or honey. Let's explore this weekday-friendly recipe!

Ingredients

– 1 cup mixed nuts (almonds, cashews, pistachios, walnuts) – 1/2 cup mixed seeds (pumpkin seeds, sunflower seeds, sesame seeds) – 1/2 cup roasted chickpea flour (besan) – 1/4 cup jaggery or honey (adjust according to taste) – 2 tablespoons ghee (clarified butter) – 1 teaspoon cardamom powder – Desiccated coconut (optional, for coating)

Step 1

Coarsely grind the mixed nuts in a food processor or blender. Ensure that they are not ground too finely. Similarly, grind the mixed seeds to a coarse texture. Heat a tablespoon of ghee in a pan over low-medium heat.

Step 2

Add the chickpea flour (besan) and roast it until it turns aromatic and slightly golden brown. Stir continuously to prevent burning. Once roasted, remove it from heat and let it cool.

Step 3

In a mixing bowl, combine the ground nuts, ground seeds, roasted chickpea flour, jaggery or honey, and cardamom powder. Mix everything well until it forms a uniform mixture.

Step 4

Take small portions of the mixture and shape them into small round laddoos by pressing firmly between your palms. If the mixture is too dry to hold together, you can add a little melted ghee to bind it.

Step 5

Once all the laddoos are shaped, allow them to cool completely before storing them in an airtight container.
