Cooked with fresh pumpkin, dates, and coated in coconut flakes, no-bake energy bites are a healthy snacking option.
1 cup pitted dates 1/2 cup raw pecan 1/3 cup pumpkin purée 1/4 cup coconut flakes 2 tsp pumpkin pie spice 2 tsp vanilla extract
Take a bowl add warm water, Now soak around 1 cup of dates in it for around 10-15 minutes.
Now take a food processor add pecans, grind them to smooth mixture.
Drain the dates well add them to the mixture and churn well. Add pumpkin, coconut, pumpkin pie spice, and vanilla.
Grind the mixture and combine ingredients well. Now set the mixture for around 30 minutes in refrigerator.
After the mixture is set round roll balls or make bars out of them. Coat them with some extra coconut.
Serve and enjoy! This snack will be fulfilling and healthy. Made with pure ingredients and fusion of coconut.
