1 cup cooked quinoa 1 can black beans (drained and rinsed) 1 cup corn kernels 1 bell pepper (diced) 1 red onion (chopped) 1 cup diced tomatoes ½ cup plain Greek yogurt 2 tbsp chipotle sauce 1 tsp cumin Salt and pepper to taste

In a bowl, mix quinoa, black beans, corn, bell pepper, and red onion.

In a separate bowl, blend diced tomatoes, yogurt, chipotle sauce, cumin, salt, and pepper.
