The Royal Rajasthani Lunch: 5 Vegetarian Dishes To Try

Inspired by the rich fare from the royal Rajput kitchens, Rajasthan’s culinary treats are a reflection of their cultural heritage. 

Here are a few vegetarian delights from Rajasthani cuisine that you can try at home for lunch. 

Pitod Ki Sabzi

A vibrant curry, Pitod Ki Sabzi has chickpea flour dumplings dunked in it which are then mixed with the gravy. Pitod is basically besan paneer.  

Jodhpuri Kabuli

This is a decadent pulao with layers of rice cooked with a hot and fiery gravy made of potatoes, tomatoes and onions.  

Gatte Ki Sabzi

The classic Rajasthani dish, Gatte refers to dumplings made of gram flour. They are cooked in a thick and creamy gravy is prepared using yoghurt. 

Rabodi Ki Sabzi

Rabodi is a mixture of buttermilk and makai (corn) that is spread out as thin sheets and dried. This is stored and used in curries. 

Panchmel Dal

Panchmel Dal’s uniqueness comes from the combination of five lentils that go into the making of this recipe. The dal is spruced up with spices and mixed with steamed rice.
