8 to 10 large basil leaves, plus more for garnish 75ml gin 25 ml lemon juice 25 ml simple syrup Club Soda Ice
Gently mash the basil leaves in a cocktail shaker. Add the gin, lemon juice and simple syrup along with 2 handfuls ice. Shake until cold then pour into a glass over ice and top with a splash of soda.
