Made by smashing whole ivy gourds and cooking it with whole garlic and minimal spices, this GSB-style delicious stir fried preparation is meant to be eaten with rotis or dal-chawal as an accompaniment. Find the full recipe by tapping to know more.

250 grams ivy gourd, trimmed 6-7 cloves whole garlic 1 teaspoon coriander powder 1 teaspoon red chilli powder ½ teaspoon turmeric powder 2 tablespoons coconut oil Salt, to taste

Using a heavy object bash the ivy gourds until the outer skin splits and sprinkle the spice powders over it to coat well.

Rest for 15 minutes while you smash the garlic and add it to the coconut oil heating in a pan.

Add the marinating ivy gourd to the oil and toss well.

Season with salt and cover the pan with a lid to cook the vegetable on a low flame for 12-15 minutes.

As the skin shrinks and the colour changes to a light golden-brown, check to see for doneness and turn off the flame. Serve hot.
