Belonging to the Awadhi cuisine, this flavourful rice dish is prepared with the goodness of winter vegetables like carrots, cauliflower, peas and potatoes. Here is an easy recipe to make tehri at home.

1 ½ cups Basmati rice (soaked and drained), 5 potatoes, 12 cauliflower florets, ¾ green peas, 2 tbsp oil, 1 tsp cumin seeds, 5 cloves, 6 black peppercorns, 3 black cardamoms, 1 inch cinnamon, 1 bay leaf, 2 onions (sliced), ½ tsp turmeric powder, 1 1/2 tsp red chilli powder, 1 tsp cumin powder, salt to taste, coriander sprig for garnish

Heat oil in a deep pan. Add cumin and let it splutter. Add cloves, peppercorns, cardamoms, cinnamon, bay leaf and onions.

Mix and sauté till the onions turn light brown. Add potatoes and cauliflower and mix well. Then add turmeric powder, chilli powder, cumin and salt and mix well.

Add ½ cup water, mix and cook it covered for 5-6 minutes. Next add rice and mix again.

Then add green peas and combine well. Add 3 cups water, cover and cook till done. Garnish with coriander and serve hot.
