Also known as alsi bhaat, this lesser-known Bihari delicacy is a great way to use up any leftover rice. Nutty, loaded with flavour and nutritional value, recreate this easy recipe at home using a handful of easily available ingredients.

¾ cup flaxseeds 2 tablespoons cumin seeds 1 tablespoon fennel seeds 1 tablespoon coriander seeds 3 dried red chillies 1 bay leaf 1 large onion, sliced ½ tablespoon pickle oil 2 cups rice Salt, to taste

Toast the flaxseeds in a dry pan until nutty and aromatic; set aside while you toast the cumin, fennel, coriander seeds, bay leaf and 1 red chilli.

Shallow fry the remaining chillies in oil and set aside separately.

Once the roasted spices have cooled, grind to a fine powder and remove two tablespoons to use for later. Store the remaining in an air-tight container for later.

Combine the sliced onion, pickle oil, salt and flaxseed powder in a bowl and add leftover rice to the mixture.

Toss well to combine and serve immediately, with some yoghurt on the side.
