It’s Teej today and the celebration is incomplete without sweets. With the monsoon in full swing, it is only customary to prepare seasonal delight, ghevar. Here is a simple recipe for kesar ghevar. Try it out.
¼ cup ghee 1 cup maida Ghee for deep frying 2 cups sugar 2 cups water 2 tbsp saffron masala 1 tsp milk masala
Start by making sugar syrup by combining water, sugar, and milk masala in a pan.
Prepare batter for ghevar by mixing ghee, maida, water, and saffron milk masala.
In a heavy-bottom kadhai, heat ghee. Add a circular tube in the centre so that you can make a round ghevar.
Start pouring the batter in the middle and soon you will notice the mesh will start forming. Deep-fry the batter until it is crispy.
After draining excess oil, dip the ghevar in the sugar syrup and put it on a rack.
Garnish with saffron strands and pistachios. Chill it in the refrigerator before serving.
