A classic cheesecake features a creamy, smooth filling made from cream cheese, sugar, and eggs, set atop a buttery cracker crust. It’s a timeless dessert and a great way to show appreciation and gratitude for your teacher.
1 1/2 cups digestive biscuit crumbs 1/4 cup sugar 1/2 cup melted butter 2 cups cream cheese, softened 1 cup sugar 1 tsp vanilla extract 3 eggs 1/2 cup sour cream
Preheat your oven to 160°C. In a mixing bowl, combine the digestive biscuit crumbs, sugar, and melted butter.
Press the crumb mixture into the bottom of a baking bowl to form an even layer. Bake the crust for 8-10 minutes, then remove it from the oven and let it cool.
In a large bowl, beat the softened cream cheese. Add the sugar and vanilla extract, and continue to beat.
Add the eggs one at a time, beating on low speed after each addition. Gently fold in the sour cream until the mixture is smooth and well blended.
Pour the cream cheese mixture over the cooled crust spreading it evenly. Bake the cheesecake in the preheated oven for 50-60 minutes.
Turn off the oven, and let the cheesecake cool in the oven with the door slightly open for about 1 hour. Remove and refrigerate it for at least 4 hours, or overnight, to set completely. Serve plain, or top with fresh berries or chocolate sauce.
