1 cup cucumber (grated) 3/4th cup rava or semolina 3/4th cup jaggery (grated) 1/2 cup coconut (grated) 2 tbsp split cashews 1 tsp green cardamom powder 1 tsp ghee

Take a large bowl and add grated cucumber, coconut, and jaggery with cardamom powder. Mix well and keep aside for 15 mins.

Meanwhile, heat a pan and dry roast rava until it becomes aromatic. Keep it aside to cool down.

When cooled, add the rava in parts to the cucumber mix. Mix it well. Also, add cashews and mix properly.

Let the batter set for 15 minutes and mix at regular intervals. Meanwhile, prep the large pressure cooker or steamer.

Place a vessel and grease it with ghee or oil. Mix the batter well and pour it into the pan.

Place the pan in the steamer and steam the batter for 28 to 30 minutes on high heat.

Turn off the heat and let the cake remain in the steamer for 10 more minutes. Do a toothpick test and serve.
