Taste The Tropics With A Pineapple Mojito

Summery and refreshing, this Pineapple Mojito checks all the right boxes. Try a sip to slip away into daydreams of white sandy beaches and lazy afternoon waves.

Pineapple Syrup

1 ½ pounds fresh pineapple chunks (peeled) 2 tablespoons dark brown sugar (packed) ½ pound fresh pineapple (2 cups diced)

Method

Bring the pineapple, sugar and water to a simmer and let it cook for 40 minutes. Then strain out the liquid and let it cool.

For The Mojitos

1 cup mint leaves 2 cups white rum ¾ cup lime juice Ice 1 ¼ cups club soda Lime wedges 

Step 1

In a large pitcher, muddle the pineapple with the mint leaves. 

Step 2

Pour in the rum, lime juice and a cup of the pineapple syrup.

Step 3

Top with club soda and garnish with mint leaves and lime wedges. Serve in tall glasses over ice.
