Spicy Mango Salad is a vibrant and refreshing dish that combines the sweetness of ripe mangoes with a tangy and spicy kick. Perfect as a side dish or a light meal, this salad is easy to make and bursting with flavours.
2 ripe mangoes, peeled and julienned 1 red bell pepper, thinly sliced 1 cucumber, thinly sliced 1/4 red onion, thinly sliced 1/4 cup fresh coriander leaves, chopped 1-2 red chillies, finely chopped 2 tablespoons lime juice 1 tablespoon soy sauce 1 teaspoon sugar 1/4 teaspoon salt 1/4 cup roasted peanuts, roughly chopped (optional)
In a large bowl, combine the julienned mangoes, red bell pepper, cucumber, red onion, and coriander leaves.
In a small bowl, mix the lime juice, soy sauce, sugar, and salt until the sugar dissolves. Adjust the seasoning to taste.
Pour the dressing over the mango mixture and toss well to combine.
Add the finely chopped red chillies and mix thoroughly, ensuring the salad is evenly coated with the dressing.
Let the salad sit for 10 minutes to allow the flavors to meld. Before serving, sprinkle the roasted peanuts on top for added crunch.
