Eating something substantial and filling for the most important meal of the day can become a monotonous affair – especially when you’re short on time. Give the boring eggs and toast a miss and replace it with this deliciously buttery Japanese-style egg sandwich.
4 slices milk bread 4 hard-boiled eggs, chopped 2 soft-boiled eggs ¼ teaspoon sugar ½ teaspoon black pepper powder 2 teaspoons milk 4 tablespoons mayonnaise 1 teaspoon curry powder 2 tablespoons butter, softened 1 tablespoon chives, chopped Salt, to taste
Cut the crusts off of your milk bread slices and set aside, while you combine the chopped eggs, mayonnaise, curry powder, butter, milk, salt, pepper and sugar in a bowl.
Mix gently but thoroughly for all the ingredients to combine, before adding in the chopped chives.
Place one slice of bread on a flat surface and spoon the egg mixture on top.
Top off the mixture with a soft-boiled egg in the centre and place another slice of bread on top.
Using a sharp knife, slice the sandwich diagonally and serve immediately.
