Put the jaggery and water in a pan and heat on low until the jaggery is completely dissolved.

Add whole wheat flour to a big bowl. Slowly add a little jaggery water so that the mixture doesn't stick together.

Stir in some ground fennel seeds. For the next 5 minutes, leave the batter to rest.

To prepare the chillas, heat the nonstick pan over medium heat and add the ghee. Use a tissue to remove any extra ghee.

Now, use a big spoon to spread the batter out into a round shape, like we do when we make dosa. Whichever you like, you can make them thick or thin.

Place a lid on top and cook on medium heat for two to three minutes on each side, or until it's done. Serve hot.
