The sweetness of yellow pumpkins and the spiciness of a besan batter make these Pumpkin Pakodas too tasty to resist. Isn't that just what you need for your tea-time binge tonight?

1 small pumpkin, peeled 1 cup gram flour 2 tbsp rice flour ¾ cup water ¼ tsp asafoetida ½ tsp carom seeds ½ tsp turmeric powder ½ tsp red chilli powder ¼ tsp baking soda Salt, to taste Oil, for frying
Slice the pumpkin as thinly as possible. You can keep the slices long or small based on your choice.

Place the gram flour, rice flour, asafoetida, carom, turmeric, red chilli, soda and salt in a large bowl.

Mix well then gradually add water to make a thick batter. Meanwhile, heat oil in a wok to fry the pakodas.

Dip the pumpkin slices in the besan batter, coat evenly, then place in the hot oil. Fry until golden brown.
Serve the deep-fried Pumpkin Pakodas with green chutney and tea.
