2 1/2 Cups all-purpose flour 2 Teaspoons baking soda 2 Teaspoons baking powder 1/2 Teaspoon salt 1 Tablespoon ground cinnamon 1 Tablespoon ground ginger 2 Sticks unsalted butter 2 Cups granulated sugar 3 Large eggs, lightly beaten 1 Tablespoon vanilla extract 2 1/2 Cups mashed cooked sweet potatoes 1 Cup whole buttermilk

– Set oven temperature to 350°F. Grease and flour a pair of 9-inch round cake pans. Put baking parchment on the bottoms and butter the tops of them as well.

Mix the flour, baking powder, baking soda, salt, cinnamon, and ginger in a big bowl. Put aside.

Beat butter and sugar in a bowl then gradually add the eggs to get a fluffy texture.

Add vanilla and sweet potato and beat it until it is smooth.

Add the dry ingredients to butter mixture, while slowly adding buttermilk. Slowly beat until barely combined.

Evenly distribute the batter between the pans. Bake for 35 to 45 minutes at 350 degrees Fahrenheit.

Insert a toothpick in the centre if it comes out clean the cake is done.

After ten minutes of cooling in the pans, turn them over and let them cool completely on a cooling rack.
