Superfood Energy Bars: A Perfect Healthy 4:00 PM Snack

Packed with antioxidant-rich superfoods, protein and a delicious twist on top, these energy bars are the rescue to your early evening energy slumps.

INGREDIENTS

1 cup rolled oats, gluten-free ½ cup almonds ½ cup pumpkin seeds ¼ cup hemp hearts 2 tablespoons chia seeds ¼ cup dried cranberries 2 tablespoons cacao powder 3 tablespoons cacao nibs 1 tablespoon homemade jam ½ cup honey/maple syrup 2 tablespoon protein powder 4 tablespoons warm coconut oil ¼ cup peanut butter ½ cup melted dark chocolate ¼ teaspoon pink salt

METHOD

Toast the oats, nuts and seeds in a dry pan until fragrant and set aside to cool.

Once cooled, add the cacao and protein powders, cacao nibs, cranberries and jam to the mixture.

Mix together half of the melted chocolate, honey, coconut oil and peanut butter into a thick paste and add it to the nutty mixture.

METHOD

Add the salt and mix well to combine; empty onto a parchment-lined sheet tray.

METHOD

Pour the remaining dark chocolate on top and let it set in the fridge for 2-3 hours.

METHOD

Remove and cut into squares and store in an air-tight container while refrigerated.
