Sumptuous Ragi Sourdough Pancakes Recipe For Brunch

That sourdough starter you’ve been safekeeping is actually a great way to use up to make these healthy and fluffy pancakes, doused in syrup and fresh fruits.

INGREDIENTS

½ cup ragi flour 1 cup all-purpose flour 2 tablespoons sourdough starter 1 teaspoon vanilla essence 1 egg 2 tablespoons sugar 1 teaspoon baking powder 3 tablespoons vegetable oil ¼ cup milk Pinch of salt

METHOD

Combine the dry ingredients in one bowl and whisk together the wet ingredients, including the starter in another bowl.

METHOD

Pour the wet mixture into the bowl with the dry ingredients and fold with a spatula.

METHOD

Rest for 10 minutes before ladling into a hot skillet and cooking for 3-4 minutes on each side.

Serve warm, with maple syrup, fresh seasonal fruit and whipped cream.
