Summer Time Favourite: Bengali Aam Dal Recipe

Toker Daal literally translates to "sour dal" in Bengali. The tart, unripened Green Mango is mostly responsible for the sour flavour. This green mango recipe is a go-to favourite among the many lentil dishes in every Bengali home in India during the summer.

Ingredients

1/4 cup Masoor Dal or Red Lentils 1 Green Mango Small Size 1/2 tsp. Panchphoron 1 Dried Red Chilli 1 Bay Leaf 1 cup Water 2 tbsp Mustard Oil Salt to Taste 1/4 tsp. Turmeric Powder 4 tbsp Sugar

Step 1

Pressure cook the red lentils until they are tender with water and salt. Now Cut the green mango into small cubes after peeling it.

Step 2

Now take a pan, heat the oil while adding the panchphoron, bay leaf, and red chilli.

Add in the turmeric powder and  chopped green mango. Include the cooked lentils once they have turned golden.

Step 4

Now Stir and add water if required. Add the sugar, again use your judgement. Sugar will  balance the sharp tang of the mango, but should not make the dal overtly sweet.

Now add seasoning and add salt as per taste. Let it simmer for 3-4 minutes, till the mango pieces become soft and tender.

Now make white rice as desired and Serve accordingly. Enjoy this tangy meal with your loved ones!
