Treat yourself to a taste of the tropics with these delightful sweet mango pancakes. Fluffy and infused with juicy mango pieces, they offer a burst of tropical flavors in every bite.
1 cup all-purpose flour 2 tbsp sugar 1 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 1 cup buttermilk 1 large egg 2 tbsp melted butter 1 tsp vanilla extract 1 ripe mango,diced Maple syrup, for serving Mint leaves for garnish
In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt
In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract. Mix both dry and wet ingredients.
Gently fold in the diced mango into the pancake batter. Heat a non-stick pan grease it with butter.
Pour 1/4 cup of batter onto the pan. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
Serve the mango pancakes warm with maple syrup drizzled over the top. Garnish with mint leaves.
