Jackfruit seeds are an underrated ingredient and are a flavour bomb of an ingredient; make this nutty and easy hummus recipe to make the most of this seasonal fruit.
1 cup jackfruit seeds, boiled 5-6 cloves garlic Juice of 1 lemon 2 tablespoons roasted sesame seeds 3 tablespoons olive oil Approx. ½ cup cold water Salt to taste
Remove the peels from the boiled jackfruit seeds and add them to a blender along with the garlic, lemon juice and sesame seeds.
Blitz into a paste and add some water before grinding into a smooth paste.
Add olive oil and salt to taste and blend once again. Serve with cucumber and carrot sticks.
