This gin-based cocktail, muddled with aromatic herbs and fresh cucumber is both, refreshing and simple to whip up. Sip on this cocktail at brunch or just to relax on a summer afternoon.
60 ml gin 25 ml lime juice 30 ml simple syrup 8 mint leaves 4-5 cucumber slices Soda water, to top up
Add the mint leaves, cucumber and simple syrup to a shaker and muddle well.
Add some ice, lime juice and gin. Shake well to combine the flavours.
Strain and pour into a cocktail glass of choice, filled with ice and top up with soda water to serve cold.
