This cool and minty cucumber soup is the perfect way to beat the summer heat. It's refreshing, it hydrates, and it's loaded with delicious, new flavours.
Peel and chop 2 cucumbers. In a blender, add the cucumbers, 1 cup of fresh mint leaves, 1 cup of plain yogurt, juice of 1 lemon, salt, and pepper.
Blend until smooth and creamy. If desired, strain the mixture to remove any fibrous bits.
Refrigerate the soup for at least 2 hours to chill.
Before serving, garnish with a few mint leaves and a sprinkle of black pepper.
