Stuffed Makai Ka Dhokla By Mithlesh Gupta

Makai ka Dhokla is a steamed Gujarati delicacy made from maize flour and spiced with ginger, green chillies, and yoghurt. Soft, fluffy, and slightly tangy, it’s a winter favourite, often garnished with sesame seeds and served with chutney.

Ingredients

1 cup makki ka atta (cornmeal) 2 tbsp green coriander 1 cup chopped spinach 1 green chilli finely chopped 3 tsp grated ginger 1/4 cup curd 1/2 tsp cumin seeds 1/2 tsp carom seeds 1/4 tsp garam masala A pinch of asafoetida 5 tsp turmeric powder 1/2 tsp red chilli powder 3 tsp salt or to taste 1 tsp coriander powder 1/4 tsp baking soda 1 tbsp Oil 2 tbsp Ghee

Ingredients

1 tbsp mustard oil 3 tsp cumin seeds 1 tsp Fennel 3 tsp whole coriander 1/3 tsp Asafoetida 1 tbsp sesame seeds 2.25 gram split yellow soaked (moong dal) 1/4 cup peas 1 green chilli 3-inch ginger 3 tsp red chili powder 1 tsp coriander powder 3 tsp salt or to taste 5 tsp dry mango powder/ aamchur 5 tsp garam masala 

Step 1

 In a bowl put Makki ka atta (corn meal), carom seeds, cumin seeds, salt, red chili powder, coriander powder, turmeric powder, garam masala, curd, baking soda and oil and mix. 

Step 2

Add cilantro leaves, and spinach leaves to the flour mixture.. Gradually add lukewarm water and knead a soft dough. Keep aside for 15 minutes. Now let's make the stuffing. 

Step 3

Put the soaked moong dal, green chilli, and ginger in the grinder, grind coarsely and remove into a bowl. Now add peas, grind coarsely, and keep it on the side. The fennel and coriander also have to be coarsely crushed. 

Step 4

Heat a tablespoon of mustard oil in the pan, when the oil is hot, add asafoetida cumin seeds, coarsely ground fennel, and coriander, and roast few seconds. Add sesame seeds. Add the ground lentils and roast the dal continuously until it dries and smells good. It will take 6-7 minutes. 

Step 5

Now add peas and cook for 3-4 minutes. Then add coriander powder, turmeric, red chilli powder, salt, mango powder, and garam masala powder, and fry for a minute. Turn off the flame. Keep it aside to cool down. 

Step 6

Divide the dough into 5 equal parts. Shape it around with your hands. Now take one dough and make it like a basket with the help of fingers. Put 1 tablespoon moong dal and peas mixture in this basket of flour and close it properly. Flatten them a bit and then using your fingers, press down in the middle to create a small hole.
