Stuffed idli is a unique twist to the traditional South Indian idli. While the stuffing can be prepared using your favourite ingredients, this guide will help you prepare the classic potato mix that elevates the taste of the rice cakes.
1 cup lentils 1 cup rice Water as needed 2 tbsp oil 4 boiled potatoes 1 tsp fenugreek seeds 1 tsp coriander 2 tbsp coriander leaves ½ tsp red chilli powder ¼ tsp turmeric Salt to taste ¼ tsp garam masala 1 tsp cumin seeds, green chilli
Soak lentils, fenugreek seeds, and rice overnight and blend in the morning. Let the batter ferment for 6-8 hours.
Peel off the skin of boiled potatoes and crush them with your hands.
Heat oil in a kadhai, add cumin seeds and chopped green chillies.
Add turmeric, red chilli powder, and other spices. Cook potatoes in this blend.
Grease moulds and add idli batter. Drop the aloo mix in the centre and pour some more batter over it.
Steam the idlis and serve them hot for breakfast, lunch, or dinner.
