Known for its honeycomb-like texture and richness, this sweet dish is made from a crispy disc of fried flour, soaked in sugar syrup, and topped with mawa, saffron, and nuts. Making ghevar at home may seem daunting, but with the right technique, you can create this delicate and flavorful dessert with ease. Here’s a simple recipe to make this festive treat at home.

Ingredients

– 1 cup all-purpose flour (maida) – 1/4 cup ghee – 1/2 cup cold milk – 1 cup cold water – 1 tbsp lemon juice – 1/4 tsp cardamom powder – Saffron strands (optional) – 1 cup sugar – 1/2 cup water (for sugar syrup) – Chopped pistachios and almonds (for garnish) – Ghee (for frying)

Step 1

In a bowl, whisk the ghee until light and creamy. Gradually add the flour and mix. Slowly incorporate cold milk, water, and lemon juice until the batter reaches a pouring consistency. Add saffron and cardamom powder for flavor.

Step 2

Heat water and sugar in a pan until it reaches a one-string consistency (when a drop forms a thin thread between your fingers). Set aside.

Step 3

In a deep, narrow vessel, heat ghee. Pour a ladleful of batter into the hot ghee from a height, allowing it to spread naturally. Repeat this until the disc forms and turns golden. Drain on paper towels.

Step 4

Dip or pour sugar syrup over the ghevar, and garnish with chopped nuts and saffron strands.
