Who doesn't love a good plate of chowmein when roaming around the street and exploring the market? Make the same delicious egg hakka chowmein you order every time you go out in your home with available ingredients.
200g Hakka noodles 1 onion 1 bell pepper 1 carrot 1/2 cup cabbage 2 cloves garlic 1-inch ginger 2 tablespoons soy sauce 1 tablespoon tomato ketchup 1 teaspoon vinegar 1/2 teaspoon salt 1/4 teaspoon black pepper 1 teaspoon red chilli sauce 2 eggs 2 spring onions
Boil the Hakka noodles in salted water until al dente. Drain and set aside.
Heat oil, add onion, ginger, garlic, bell pepper, carrot, and cabbage. Stir-fry for 2-3 minutes.
Add the cooked noodles to the wok and toss well to combine with the vegetables.
Add soy sauce, tomato ketchup, vinegar, salt, pepper, and red chilli sauce. Mix well.
Scramble the eggs and add them to the noodles.
Garnish with spring onions and serve hot.
