Aloo Tikki is a popular Indian street food famous for its crispy outside and soft inside. Here are a few tips to get that street-style taste at home to get that crunch and spice balance right.
Always use high-starch potatoes like russets. They make the tikkis crispy and hold them together.
After boiling, make sure the potatoes are dry. Excess moisture can make the tikkis soggy and break while frying.
Add breadcrumbs, cornflour or rice flour to the potato mix to absorb moisture and make them crisper.
A mix of spices like cumin, coriander, garam masala and chaat masala gives that street-style punch.
Instead of deep frying, shallow fry the tikkis in plenty of oil for a golden brown, crispy outside.
Let the tikkis rest in the fridge for 15-20 minutes. This helps them firm up and fry better.
Make sure your tikkis are flattened so they cook evenly and crisp up properly on the outside.
