8 large strawberries, hulled 100 grams cherry tomatoes 3 tablespoons tender cucumber 1 jalapeno ¼ cup chopped mint 3 tablespoons honey/maple syrup Juice of 1 lemon Salt and pepper to taste
Add all the ingredients to a blender jar along with 3-4 ice cubes and blend into a smooth mixture.
Pour into a bowl and leave it to chill in the fridge for an hour.
Serve cold, in individual portions, garnished with chopped strawberries and mint leaves.
