Choose avocados that are ripe if you plan to use them within a day or two.
Once avocados are ripe and ready to eat, you can slow down their ripening process by storing them in the refrigerator.
If you've cut into an avocado and want to store the unused portion, keep the pit in the half you aren't using and sprinkle the exposed flesh with lemon or lime juice to prevent browning.
Place mashed avocado into an air-tight container or freezer bag, and store for up to 3 months.
Speed up the ripening process, place avocados in a paper bag with a banana or apple.
