A refreshing and flavourful raita which originated in Hyderabad, Burhani Raita is served alongside biryanis, kebabs, and curries. Here's how to make this at home.

1 cup plain white yoghurt 1 tbsp finely chopped fresh coriander leaves 4 garlic cloves, minced ¼ tsp red chilli powder ¼ tsp roasted cumin seeds powder a pinch of black salt a pinch of table salt

Dry roast a tablespoon of cumin seeds in a stainless steel pan over medium flame.

Once the cumin starts to brown and the aroma of raw cumin subsides, take it off the heat. Use a spice grinder to dry grind the cumin seeds to a fine powder.

In a mixing bowl, add the plain white yoghurt and whisk it well. Then add the finely chopped coriander leaves.

Add the roasted cumin seed powder, the red chilli powder, black salt and salt. Mince the garlic cloves over the top of the raita and mix well. Chill and serve.
