Homemade Energy Bars are more sustainable and making them is fun too. Here's how.
1 cup puffed rice 1 cup instant oats 1 cup chopped Medjool dates 3 cups roughly chopped mixed nuts ¼ tsp cinnamon powder ¼ tsp cardamom powder 1 cup jaggery ¾ cup water 1⁄4 cup ghee
Add the puffed rice, oats, dates, and chopped nuts to a mixing bowl. Mix them well.
In a saucepan bring the water and the jaggery up to a simmer. Add in the cinnamon and cardamom powder.
Once the spices and jaggery are fully dissolved, add in the ghee and let it cook for a minute.
Add the dry ingredients and fold them in. Once everything in the pan is covered evenly, bring them off the heat.
Spread them out evenly on a wide enough baking sheet lined with parchment paper and cut them into blocks while they're warm and just starting to set.
Let them cool in the sheet tray and separate them individually thereafter. Enjoy!
