A healthy, colourful medley of fresh vegetables, sautéed in oil with garlic and herbs, finished with lemon and optional parmesan for added flavour. For those who are new to cooking, here are a few steps to sauté vegetables perfectly.
Cut vegetables into bite-sized pieces. Heat oil to cover the bottom of a large skillet over medium to medium-high heat.
Add the vegetables in small batches. Cook, stirring occasionally, until they become tender.
Season the vegetables with salt and pepper. Add your favourite spices to match the flavour of your meal.
Ensure the vegetables are cooked to your desired tenderness. Taste a piece to see if it’s done.
Transfer the sautéed vegetables to a serving dish. Enjoy them as a side dish, or mix them into your main meal.
