Rajasthani pyaaz kachori is loved by foodies across India. The spicy and subtly sweet deep-fried snack is consumed for breakfast or enjoyed with evening tea. Follow this recipe to make it at home.
1 chopped green chillies Oil for frying 1 cup maida, atta ¼ tsp red chilli, turmeric ½ tsp coriander, cumin ½ tsp garam masala, fennel ½ tsp ginger paste, mango powder Water for kneading 2 onions 2 tbsp ghee 2 tbsp coriander ½ cup besan
Sprinkle salt over atta and maida. Add a dollop of ghee and knead the dough.
While the dough rests, roast besan cumin and fennel seeds.
Add powdered spices, coriander, ginger paste, and onion to the besan mixture.
Heat oil in a kadhai while you stuff small lemon-sized dough with an onion mixture.
Roll the balls into flat kachori and deep-fry them in hot oil until crispy.
Enjoy pyaaz kachori with chutney or aloo sabzi.
