Aloo kachori is a perfect item for breakfast or brunch. It is delicious and fulfilling. If you are inviting guests over for a gathering, follow this step-by-step recipe to prepare this traditional dish.
For Dough 1 tbsp rava 2 cup all-purpose dough Water as needed Oil for frying A pinch of salt 3 tbsp ghee
For Aloo Mixture 2-3 boiled potatoes A pinch of asafoetida 1 tsp cumin, fennel, and coriander ¼ tsp turmeric ½ tsp garam masala, red chilli ½ tsp ginger, mango powder Salt to taste 2 chopped green chillies
Knead a soft dough for kachori by adding ghee to it.
In a large bowl, mash potatoes with spices, green chillies, and fresh coriander leaves.
Take a small amount of dough and stuff it with the spiced aloo mixture.
Roll it into a slightly thick disc and drop it into a kadhai with hot oil.
Deep-fry kachoris until cooked. Serve with sabzi or coriander-mint chutney.
