Maharashtrian Kharwas is a traditional Indian dessert made with the first milk produced by cows after giving birth. It's a unique and delicate dish with a custard-like texture.
500 ml cow’s first milk 500 ml regular milk 1 cup sugar 1/4 teaspoon cardamom powder A pinch of saffron strands 1/4 teaspoon nutmeg powder 2 tablespoons grated coconut 2 tablespoons chopped nuts
Preheat a steamer. In a large mixing bowl, combine the colostrum milk and regular milk. Mix well to ensure they are evenly blended
Add the sugar to the milk mixture and stir until it is completely dissolved. Add the cardamom powder, saffron strands, and nutmeg powder to the mixture.
Pour the mixture into a greased shallow dish or individual moulds that fit inside your steamer. Place the dish or moulds in the steamer. Cover and steam for about 30-40 minutes.
Once cooked, remove the dish from the steamer and let it cool to room temperature. Refrigerate for a few hours.
Before serving, garnish with grated coconut and chopped nuts.
Cut the kharwas into desired shapes, such as squares or diamonds, and serve chilled
