From rice preparation to chaat, tamarind chutney balances the flavours, adds sourness, and makes every bite appetising. While you can purchase it from outside, preparing it at home is a better choice.
½ cup dates ½ cup tamarind 1 tsp red chilli powder ½ cup jaggery Water as needed ½ tsp ginger powder ½ tsp kala namak ½ tsp roasted fennel seeds ½ tsp roasted jeera ¾ tsp roasted coriander
Add tamarind, dates, red chilli powder, and jaggery in a bowl.
Pour 2 cups of water and cook the ingredients or pressure cook for one whistle.
Add roasted spices and salt to the blend.
Cook the roasted spices and reduce the water to half.
Once the ingredients are cooked, let them cool.
Pour over a sieve and use the strained chutney according to your choice.
