Looking for a quick, nutritious breakfast? Corn uttapam is a delicious and easy option that combines the goodness of corn with the classic South Indian pancake. It’s filling, healthy, and perfect for a busy morning.
In a bowl, mix 1 cup of idli/dosa batter with ½ cup of boiled sweet corn, finely chopped onions, tomatoes, and green chillies. Add a pinch of salt.
Grease a non-stick tawa or pan and heat it on medium flame.
Pour a ladleful of the batter onto the pan and spread it lightly to form a thick pancake.
Cook for 2-3 minutes, flip, and cook the other side until golden brown. Garnish with fresh coriander and serve hot with coconut chutney or sambar.
