Sprouted Masoor Usal: A Protein-Rich Maharashtrian Delight

Made with sprouted masoor lentil, this healthy and quick side dish is perfect for every meal. Here is the recipe to prepare sprouted masoor usal at home.

Ingredients

2 cups sprouted masoor, 2 kokum, 2 tablespoon coconut (shredded), 2 tablespoon coriander (chopped) for the tadka: 1 tablespoon oil, 1 teaspoon mustard seeds, 1 teaspoon cumin seeds, ¼ teaspoon asafoetida, 1 small size onion (chopped), 1 tablespoon ginger-garlic (chopped), 2 green chilies (chopped), 6-7 curry leaves, salt as per taste

Step 1

Heat oil in a pressure cooker and add the mustard seeds, cumin seeds, asafoetida, curry leaves, onion, ginger-garlic, green chilies and sauté for a minute.

Step 2

Then add salt, turmeric powder, masoor and a cup of water. Cover it with the lid and pressure cook it until done.

Step 3

Then add Kokum and mix it well. Garnish with coconut and coriander and serve with roti or bhakri.
