From drizzling over fried eggs at breakfast to adding a touch of this deeply flavoured spicy oil to curries and stews, this thecha oil is a fun desi twist to its Chinese counterpart.
1 tablespoon minced ginger 1 tablespoon chopped green chillies 2 spring onions, chopped 1 tablespoon minced garlic 1 tablespoon crushed peanuts 2 tablespoons chopped coriander 1 teaspoon raw sugar 1 tablespoon soy sauce 100 ml peanut oil Salt, to taste
Add all the ingredients, except the oil to a mixing bowl and combine using a spoon.
Heat the oil until it begins to smoke and pour it over the mixture.
Let it sizzle for a couple of minutes before cooling completely and transferring to an air-tight jar.
Refrigerate for up to two weeks and use over fried eggs, avocado toast, as a side to parathas, etc.
